FUNCTIONAL FHT FLOURS AS AN INGREDIENT IN COATING MIXTURES

In recent years, we have observed a dynamic increase in the popularity of coated products. Besides taste, their crispiness is the main factor attracting consumers.

The use of „raw” flours in coatings often requires thickening agents with E-numbers and precise control over the production process of coated products. Despite these efforts, success is not always guaranteed.

A perfect solution to these challenges is functional FHT (Flour Heat Treated) flours. These flours are produced by subjecting „raw” flours to hydrothermal processing, which involves exposure to high temperatures and steam for a precisely defined time. This process grants the flours completely new and unique properties.

As a result, structural changes occur in the flour’s starch and proteins, providing:

  1. Crispiness and structural stability by reducing water absorption;
  2. Better adhesion of the coating to the final product by increasing its viscosity;
  3. Elimination of E-number additives such as modified starch or gum;
  4. Even product coverage and an attractive appearance throughout storage;
  5. Enhanced safety through a 5-log reduction in microorganisms compared to regular „raw” flour.

By carefully adjusting parameters such as time, temperature, and the amount of added water, we control the degree of starch and protein degradation, allowing us to produce flours with specific characteristics.

FlexFarina is the name of our hydrothermal flour processing technology, which operates as a hybrid system. The name is derived from the words „flexibility” (in English) and „farina” (Italian for flour), signifying that our flours are tailor-made and specifically designed to meet customer needs.
